In the An range, Junmai Ginjo has an elegant fruitiness and a rich umami, typically associated with Omachi rice. It is also a Genshu, that is to say not diluted with water after fermentation, in other words a Ginjo with a lot of character.

Detailed tasting notes  : This Junmaï Ginjo is produced from Omachi rice from the Okayama region. It is not filtered through a bed of charcoal (Muroka) and not reduced to water at the end of fermentation (Genshu). It is also aged for two years before bottling. The nose is lively, fresh with sweet and fruity notes of melon and banana. Light and delicate on the palate, we find the quality and freshness of spring water, with a round sweetness and a beautiful acidity that brings tension. Lots of volume and a present umami that is gradually revealed until the end of the mouth.

Recommended pairings  : To be enjoyed chilled preferably with simple dishes, but with strong flavors, with a salmon carpaccio for example.

About the brewery : The Kumaya Shuzo brewery was founded by the Ihoriya family during the Edo period, two and a half centuries ago. Originally from Kumano, on the Kishu Peninsula, they settled in the current city of Kurashiki first to participate in the construction of the annex temple of the great Kumano sanctuary. The brewery is thus located on one of the most famous pilgrimage routes in Japan, towards Kagawa on the island of Shikoku. Under the leadership of the current leader Haruo Ihoriya, a return to the local terroir is essential with the use of "Bizen Omachi" rice, Bizen being the old name of this province in the southeast of Okayama. The sakes produced from Omachi rice have a rich and tasty style that requires a certain amount of time to mature. Here, one to two years before bottling. More recently, the city of Kurashiki has made a worldwide reputation for producing high-quality denim. A particularity that Kumaya Shuzo has chosen to highlight with the design of the labels of the An range, which uses different styles of fabrics made in the region.
